CAVALETTO Maria
Research Activity
Brief Research Description
She works in the Department for Sustainable Development and Ecological Transition (DiSSTE) – Vercelli; here she coordinates the biochemistry proteomics lab. She employs mass spec, bidimensional electrophoresis and classical biochemical methodologies in the field of nutritional, clinical and environmental biochemistry. Structure-function studies on proteins and enzymes are the main area of investigation. Many research activities consist in characterizing human milk proteins, with a focus on nutraceutical and immunological roles of the milk fat globule membrane. Moreover, storage seed proteins of cereals, lentils and hemp are characterized for their structural and biological properties, highlighting the role of peptides. She is interested in the metabolic processes linked to ketogenesis and the use of medium chain triglycerides. In the field of environmental biochemistry, her activities range from the enzymatic conversion of biomasses (lignocellulose and food waste) to the plant biochemical responses to abiotic and biotic stress.
